simple trip to any old gourmet cheese shop.  You might just
come in with something specific in mind.  However, if you so
desire, we will try our best to make your time spent at the
Cheese Store somewhat of a fun and educational experience,
unlike any in New Jersey. We have collected cheese knowledge
for fifteen years and can help direct you toward the items that will
most please your palate.  We will inform you of the criteria that
make your cheese as good as it is.  We also feature  
aging
facilities which will bring all of our cheeses to peak levels of
ripeness.  You can be assured that the cheese you take home
will be the absolute best examples of the type, region,
craftsmanship, and condition available.

region. That's what the cheesemakers and
vintners do.  We'll find out the few regions that
actually produce both great wine and cheese.  
Master sommelier, Carol will bring along some of
her faves from these lands

New and Noteworthy
Dunbarton Blue:  Bold, firm textured,
and piercing.  Made from raw milk in
Shullsberg, WI.
O'Banon:  Lovely goat jewels wrapped
in Bourbon soaked chestnut leaves.
