As people mature, we acquire certain characteristics such as wisdom, experience,
and grace. You can also say the same about cheese. Cheese is a substance which
is affected by living materials which enhance the qualities of the cheese. That is why
The Cheese Store will have facilities that will allow for the continuation of the
maturation process for most of its cheeses. Aging cheese is a complex endeavor
which requires particular conditions of temperature and humidity. It also requires the
care of craftsman's eye which recognizes the nuances that happen to an aging
cheese and a craftsman's hand which applies various techniques that allow the
cheese to develop its maximum flavor.
There is a certain point in time where a cheese will reach it's height of flavor ("au
point"). Now, what that point is can be a highly subjective issue of debate. The great
thing is, at The Cheese Store, we will select a cheese for you that will match your
idea of what "au point" is.

The cheese on the right is fresh, moist, and gentle.
The cheese on the left has spent 2 weeks in our aging
cave. It has developed a mold rind and has begun to
soft ripen. The result is a lovely smooth disc with a
gentle tang. You have to fly to the Loire Valley in
France to get something like this. Or just come to
